Tart Cherry Midnight Snack Cookies

Makes 25 cookies
Ingredients
- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened at room temperature
- 1 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ½ cups old-fashioned rolled oats
- ½ cup dried Montmorency tart cherries
- ½ cup macadamia nuts
Instructions
- In a large bowl, mix the flour, baking powder, baking soda, and salt.
- Set aside. In a separate bowl, add the butter and honey and mix with a hand mixer until smooth.
- Add the eggs and vanilla and mix again until combined. Fold the dry ingredients into the wet ingredients until incorporated.
- Fold in the oats, tart cherries, and macadamia nuts.
- Scoop the dough into 2-tablespoon balls and place in the fridge to chill for 30 minutes.
- While the dough is chilling, preheat the oven to 325℉ and line a baking sheet with parchment paper.
- Bake for 12 minutes, until brown around the edges. Let cool completely before serving.
